Favorite Juneteenth Recipe
What's your favorite Juneteenth food?
Our current is Mashama Bailey's Pecan Pesto recently shared in the New York Times
1 small clove of garlic
1 cup fresh basil leaves (use whatever you can find)
1 cup fresh Thai basil leaves
1 cup fresh opal basil leaves
1/2 cup toasted pecans
1/2 cup extra virgin olive oil
2 tablespoons freshly grated parmesan or pecorino romano (optional)
- pulse garlic in a food processor to break it into smaller pieces
- add basil and pecans to the processor - start running the machine while you slowly add the olive oil. mix until mostly smooth
- move pesto to a bowl and stir in cheese
- season to taste with salt
